Salmon Stir-Fry!!

The boyfriend and I made dinner last night and decided to try something new..SALMON STIR-FRY! We love just experimenting with flavors and hope they work out. Last night was the best dinner we have EVER made and it was super duper easy.

Until the last couple of years of living alone, I never realized just how easy it is to make delicious meals. I know some of my friends still are blown away by the things we make, but they really are SO easy. I hope that these recipes help them discover their own delicious meals. All dinners I make and post should be adapted to suit what you have in your kitchen, and what flavors you like. I just hope my friends use it as a reference for how easy it really can be to make amazing meals.

To make this you will need:

  • Rice
  • 2 salmon fillets (with the skin on preferably)
  • lots of veggies (we used zucchini, squash, carrots, and red & green bell peppers)
  • Olive oil
  • 1 tbsp honey
  • 2 eggs
  • 2 tbsp soy sauce
  • 1/2 tbsp Cayenne Seasoning
  • 2 packages of curry paste–choose whatever your favorite is!
  • 1-2 cup yogurt (depending on how you want the consistency of the curry)
For the marinade:

1. Lightly beat the eggs into a large bowl.
2. Add 2 tbsp soy sauce, cayenne pepper, and honey. Then, mix until well combined.
3. Clean the salmon fillets, but leave the skin on, gently score with a knife on both sides.
4. Marinade for 1-2 hours–flipping if needed.
For the rest of the meal:
1. Boil your rice–make as much as you need, we made 3-4 servings (we LOVE leftovers).
2. In a large skillet coat with olive oil, then start cooking veggies on medium low heat.
3. Put a skillet large enough for the salmon fillets on the stove and turn up to medium and allow to heat up for a few minutes, then spray non stick cooking spray, and place the fillets on it.
4. Cook the salmon for 3-4 minutes on each side. You want them to be white on the outside, but still pink in the middle (but not super shiny).  When finished they will peel away from the skin easily–just dispose of it after that.
5. While salmon is cooking, combine curry paste and yogurt in a medium bowl.
6. Add the steamed rice and curry mixture to the veggies, also add soy sauce to desired flavor (we used about 2 tbsp).
7. Fill your plate with the rice/veggies, then top with a salmon fillet.
ENJOY!!

Date Night & Heart shaped Pizza & Bad(/AMAZING)90’s Movie

The BF and I decided to make pizza again for dinner…I swear it isn’t the only food we ever make, but it was SO amazing I had to share it on here.

For Christmas, The BF’s mom got me an Aged Parmesan Flatbread mix, which I just realized I hadn’t used yet- it was like Christmas all over again when I found it! We just bought a bunch of veggies at the store, as well as pepperoni. Pizza was the PERFECT thing to use it for.

Sunday nights have become a indoor date night for us, so we decided to make some heart-shaped pizzas, and got a copy of Don’t Tell Mom the Babysitter’s Dead for entertainment–The BF had NEVER seen it. Can you believe that?!

movie pick of the week

I mixed up the yeast, water, oil, and flatbread mix and let it sit for 30 minutes to rise.

We cooked some sausage and pan fried some veggies (squash, zucchini, onion, tri-color bell peppers).

We made garlic, Parmesan butter to brush on top of the crust. It was delicious!! We also added Parmesan, crushed red pepper, and garlic powder to jar of pizza sauce to add a little bit of extra flavor. We spread the sauce on the crust, then added the pepperoni. Next, we sprinkled the crumbled sausage over the pizza. Then, we added the veggies. Next, we topped it off with some shredded cheese. We threw them back in the oven for about 10 minutes. It turned out really well and was super delicious. I am SO excited for leftovers tomorrow!

after toppings, before the cheese

Next time you are just sitting around and can’t figure out what to make for dinner, grab some bread mix and make heart shaped pizza. Everything tastes better when it is in a fun shape right?! And every dinner is more enjoyable with a really rad 90’s movie…right? :)

all finished and ready to eat!!

BBQ Whiskey Chicken Veggie Pizza

For dinner tonight, we decided to make our version of BBQ Chicken Pizza. We added WHISKEY! I think that most things need more whiskey really. Mr. Boyfriend and I cheated a little tonight, we bought Pillsbury pizza crust and Pillsbury breadsticks. However, we made some garlic parmesan butter to spread on the crust and breadsticks to add some flavor.

For the sauce, we used Sweet Baby Ray’s Original BBQ sauce, and added some Jim Beam and garlic powder–We heated the mixture up before putting them on the pizza.

For the toppings we used zuccini, squash, red onion, and chicken (seasoned with our favorite seasonings). We cooked all of the toppings in a frying pan before putting them on the crust. Then, topped with Mozzarella, Parmesan, Romano, and Provolone cheeses.

So delicious and SUPER easy!!
